Yield: 8-10 cups

Ingredients:

  • Sugar (3 cups)
  • Cinnamon (3 tbsp)
  • Cayenne (1/2 tsp, optional)
  • Salt (1/4 tsp)
  • Water (1-1/2 cups)
  • Nuts (2 lbs)

Directions:

  1. Line a cookie sheet with parchment paper.
  2. Mix sugar, cinnamon, cayenne, salt, and water in a saucepan over medium heat.
  3. Stir frequently until mixture reaches 238°F.
  4. Remove from heat and immediately stir in nuts.
  5. Continue stirring until nuts are coated and mixture is crystallized.
  6. Pour mixture onto cookie sheet.
  7. Let cool and break apart any large pieces.

Notes:

  • If you aren’t sure what nuts to use, unsalted roasted almonds are a good choice.
