Ingredients:

  • Cooked basmati rice (2 cups)
  • Whole milk (2 cups)
  • Heavy cream (1 cup)
  • Coconut milk (13.5 oz)
  • White sugar (1/2 cup)
  • Cardamom (1/2 teaspoon ground, about 3 pods)
  • Golden raisins (2/3 cup)
  • Slivered almonds (2/3 cup)
  • Rose water (1/2 teaspoon)

Directions:

  1. Cook rice and milk in a medium saucepan over medium heat until the mixture begins to boil, stirring frequently.
  2. Decrease heat to low and simmer until the mixture begins to thicken, stirring frequently.
  3. Increase heat to medium and stir in cream, coconut milk, sugar, and cardamom.
  4. Cook until the mixture begins to thicken, stirring frequently.
  5. Stir in raisins, almonds, and rose water.
  6. Serve chilled.

Notes:

  • For a thicker pudding, add 1/2 cup of coconut flakes in step 5.
