Ingredients:

  • Whole milk (2-1/2 cups)
  • Uncooked white rice (1/3 cup)
  • Salt (1 pinch)
  • Egg (1)
  • Brown sugar (1/4 cup)
  • Vanilla extract (1 tsp)
  • Cinnamon (1/4 tsp)
  • Golden raisins (1/3 cup, optional)

Directions:

  1. Add the rice, milk, and salt to a medium, heavy-bottomed pot.
  2. Bring to a boil over high heat, then reduce heat to low.
  3. Simmer until rice is tender (about 25 minutes), stirring frequently to prevent rice from sticking to bottom of pot.
  4. Whisk together egg and sugar until well mixed.
  5. Add 1/2 cup of rice mixture to egg mixture 1 tablespoon at a time, whisking constantly.
  6. Add egg mixture to rice mixture and stir until thickened.
  7. Stir in the vanilla and raisins.
  8. Remove from heat and stir in the cinnamon.
  9. Serve hot or chilled.
